Though cooked sausage (kookworst) has many varieties, it is perhaps the most well-known Dutch sausage. Cutted into slices, together with little cubes of cheese, it is one of the most often served traditional Dutch party and birthday snacks.
Origin
Cooked sausage is a composite product that contains offcuts left over after the butcher has cut meat into pieces. The name, which means cooked sausage, can be explained by the fact that this sausage is in all cases cooked. In some cases, the cooked sausage is then also smoked for a short time.
This product at Compaxo
Compaxo's cooked sausage is characterized by its light-pink color, and the addition of black pepper, nuts and mace give the product a surprisingly hearty flavor. Our cooked sausage has a coarse texture.
Options
There are a large variety of options when it comes to our cooked sausage. We can smoke the sausages after the cooking process, or leave this step out. By means of the co-extrusion technique, we are able to offer a cooked sausage without a casing, and which keeps its shelf life when unrefrigerated. This makes this product ideally suited for eating on the road. In addition, we are also able to offer traditional cooked sausage with a casing.
Recommendations and facts
An upgraded version of the cooked sausage is the grillworst. In order to make grillworst, we add a layer of herbs and spices around the outside, and it is subsequently also baked.
